That works out to 5 tablespoons soy sauce per 1 kg of ribs, so the batch scales down cleanly.

The full batch adds 1 grated onion, 3 tablespoons mirin, 2 tablespoons sesame oil, 3 tablespoons minced garlic, 1 tablespoon pepper, 2 tablespoons sesame seeds, and 1 chopped scallion.
Mirin is there to cut the gaminess and lift the aroma, not to sweeten.
The cooked dish lands sweet-savory and nutty, at roughly 450 kcal per serving in the Baek Jong-won style version.

If the meat will sit overnight anyway, the ratio holds without changes.
If it will only marinate 3 hours, grate the pear finer so the enzymes reach the surface faster.

Soak the ribs in cold water for 20–30 minutes, change the water once, then pat them dry.

For frozen ribs, thawing in 2 liters of water with 4 tablespoons of sugar takes about 20 minutes.

The pear and onion base gives the classic sweet, clean profile, while cola and kiwi lean sweeter and softer.
Softer meat is not the same as deeper flavor, which is why the long versions still exist.
